Ingredients

  • 6 ounces day-old rye bread, cut into small cubes
  • 1 cup fennel, chopped
  • 6 ounces thinly sliced low-sodium ham, cooked and chopped
  • 1 cup baking apple, chopped, of your choice
  • 1 cup reduced-fat cheddar cheese, shredded
  • 1/2 cup green onions, thinly sliced, plus more, optional, to taste, for garnish
  • 1 1/2 cups refrigerated or frozen egg product, thawed, or 6 eggs, lightly beaten
  • 2 cups fat-free milk
  • 1/4 teaspoon black pepper
  • salt, to taste

Directions

Step 1 -Preheat the oven to 325 degrees F.

Step 2 -Grease a 2-quart rectangular baking dish.

Step 3 -Spread 1/2 of the bread cubes in the prepared baking dish.

Step 4 -Sprinkle the fennel evenly over the bread cubes.

Step 5 -Top the fennel layer with the ham, the apples, the cheese, and 1/2 cup of the sliced green onions.

Step 6 -Top the bake with the remaining bread cubes.

Step 7 -In a medium bowl, add the eggs, the milk, the pepper, and the salt.

Step 8 -Drizzle the egg mixture evenly over the bread mixture in the dish and gently press it down so all of the bread cubes are moistened.

Step 9 -Bake, uncovered, until the edges are set and the center is still a little runny, about 50-60 minutes.

Step 10 -Transfer the bake from the oven and let it stand until the center is set, about 10 minutes.

Step 11 -Serve garnished with the extra green onions.
